Ingredients

- 1 cup shishito peppers
- 2 tablespoons olive oil
- 1 lime, juiced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 1 tablespoon chopped fresh cilantro
Instructions
- Heat a grill or skillet over medium-high heat.
- Toss shishito peppers with olive oil, salt, and black pepper.
- Grill or sauté the peppers until charred and blistered, about 5-7 minutes.
- Remove from heat and let cool slightly.
- In a bowl, combine the charred peppers, lime juice, sour cream, mayonnaise, and cilantro.
- Mix until well combined and adjust seasoning to taste.
- Serve with tortilla chips or fresh vegetables.
Notes
- Shishito peppers are mild, but occasionally one can be spicy.
- For a vegan version, substitute sour cream and mayonnaise with plant-based alternatives.
- This dip can be made ahead of time and stored in the refrigerator for up to 3 days.
