Ingredients

  • 3 medium sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon harissa paste
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the olive oil, honey, harissa paste, garlic powder, smoked paprika, salt, and pepper. Mix well until all ingredients are fully combined.
  3. Add the sweet potato cubes to the bowl and toss until they are evenly coated with the harissa mixture.
  4. Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and caramelized, stirring halfway through for even cooking.
  6. Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro or parsley if desired before serving.
