Deliciously roasted sweet potatoes with a spicy harissa and honey glaze.

- 3 medium sweet potatoes, peeled and cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 tablespoon harissa paste
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the olive oil, honey, harissa paste, garlic powder, smoked paprika, salt, and pepper. Mix well until all ingredients are fully combined.
- Add the sweet potato cubes to the bowl and toss until they are evenly coated with the harissa mixture.
- Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and caramelized, stirring halfway through for even cooking.
- Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro or parsley if desired before serving.
Notes
- For a spicier kick, add more harissa paste or a pinch of cayenne pepper.
- Try adding other vegetables like carrots or bell peppers to the mix for added flavor and color.
