Ingredients

  • 8 ounces halloumi cheese, cut into 1-inch cubes
  • 1 pint cherry tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)
  • Skewers (wooden or metal)

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine the olive oil, dried oregano, garlic powder, salt, and pepper. Mix well.
  3. Add the halloumi cubes and cherry tomatoes to the bowl. Toss gently to coat them evenly with the marinade.
  4. Thread the halloumi and cherry tomatoes onto the skewers, alternating between the two.
  5. Place the skewers on the preheated grill. Cook for about 8-10 minutes, turning occasionally, until the halloumi is golden brown and the tomatoes are slightly blistered.
  6. Remove from the grill and let cool for a minute. Garnish with fresh basil leaves if desired.

Notes

  • For added flavor, marinate the skewers for 30 minutes in the olive oil mixture before grilling.
  • Substitute zucchini or bell peppers for the cherry tomatoes for a different taste and texture.
