Ingredients

- 8 ounces halloumi cheese, cut into 1-inch cubes
- 1 pint cherry tomatoes
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
- Skewers (wooden or metal)
Instructions
- Preheat the grill to medium-high heat.
- In a large bowl, combine the olive oil, dried oregano, garlic powder, salt, and pepper. Mix well.
- Add the halloumi cubes and cherry tomatoes to the bowl. Toss gently to coat them evenly with the marinade.
- Thread the halloumi and cherry tomatoes onto the skewers, alternating between the two.
- Place the skewers on the preheated grill. Cook for about 8-10 minutes, turning occasionally, until the halloumi is golden brown and the tomatoes are slightly blistered.
- Remove from the grill and let cool for a minute. Garnish with fresh basil leaves if desired.
Notes
- For added flavor, marinate the skewers for 30 minutes in the olive oil mixture before grilling.
- Substitute zucchini or bell peppers for the cherry tomatoes for a different taste and texture.
