Delightful Guava Macarons filled with creamy guava buttercream, perfect for any occasion.

- 2 cups powdered sugar
- 1 cup almond flour
- 1/4 teaspoon salt
- 3 large egg whites (room temperature)
- 1/4 teaspoon cream of tartar
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon guava paste (or guava puree)
- Pink food coloring (optional)
- For the Creamy Guava Buttercream:
- 1/2 cup unsalted butter (softened)
- 2 cups powdered sugar
- 2 tablespoons guava paste (or guava puree)
- 1 tablespoon milk (more if needed)
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 300°F (150°C). Line two baking sheets with parchment paper or silicone baking mats.
- In a bowl, sift together the powdered sugar, almond flour, and salt. Set aside.
- In a separate bowl, beat the egg whites with an electric mixer on medium speed until foamy. Add the cream of tartar and continue beating until soft peaks form. Gradually add the granulated sugar, one tablespoon at a time, while increasing the mixer speed to high. Beat until stiff peaks form and the mixture is glossy.
- Gently fold in the vanilla extract, guava paste, and food coloring (if using) into the meringue.
- Carefully fold in the almond flour mixture in three additions until fully combined. The batter should flow like lava and form a ribbon when lifted with a spatula.
- Transfer the batter to a piping bag fitted with a round tip. Pipe 1.5-inch circles onto the prepared baking sheets, leaving space between each macaron. Tap the baking sheets gently on the counter to release any air bubbles.
- Let the piped macarons sit at room temperature for 30-60 minutes, or until a skin forms on the surface. They should not be sticky to the touch.
- Bake the macarons in the preheated oven for 15-20 minutes, or until they have risen and formed feet. Let them cool completely on the baking sheets.
- While the macarons cool, prepare the creamy guava buttercream. In a bowl, beat the softened butter until creamy. Gradually add the powdered sugar, guava paste, milk, and vanilla extract, mixing until smooth and fluffy. Adjust the consistency with more milk if necessary.
- Once the macarons are cool, pair them up by size. Pipe a dollop of creamy guava buttercream onto the flat side of one macaron and sandwich it with its matching pair.
Notes
- For a tropical twist, try adding a pinch of coconut extract to the buttercream.
- You can also substitute the guava paste with passion fruit puree for a different flavor profile.
