A flavorful Guatemalan spiced chicken stew featuring a medley of spices and seeds.

- 2 pounds bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 bell pepper, diced
- 2 medium tomatoes, chopped
- 1 cup chicken stock
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (or to taste)
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 1/4 cup pumpkin seeds (pepitas)
- 1/4 cup sesame seeds
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and bell pepper, sautéing until they soften, about 5 minutes.
- Incorporate the minced garlic and cook for another minute until fragrant.
- Season the chicken thighs with salt and black pepper, then place them in the pot to brown on both sides for approximately 5 minutes.
- Add the chopped tomatoes, chicken stock, cumin, coriander, smoked paprika, cayenne pepper, and oregano to the pot. Bring to a boil, then lower the heat and let it simmer for 30-35 minutes, or until the chicken is fully cooked and tender.
- While the stew simmers, toast the pumpkin seeds and sesame seeds in a separate dry skillet over medium heat for about 3-5 minutes, stirring frequently until golden and fragrant.
- Once the chicken is ready, remove it from the pot, shred the meat, and discard the bones and skin. Return the shredded chicken to the pot and mix well.
- Stir in the lime juice and chopped cilantro just before serving. Sprinkle the toasted seeds on top of each serving for extra crunch.
Notes
- For a richer flavor, consider adding 1/2 cup of coconut milk during the last 10 minutes of cooking.
- If you prefer a spicier kick, add chopped jalapeños or a splash of hot sauce when adding the tomatoes.
