Ingredients

  • 2 pounds bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 medium tomatoes, chopped
  • 1 cup chicken stock
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (or to taste)
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/4 cup pumpkin seeds (pepitas)
  • 1/4 cup sesame seeds
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and bell pepper, sautéing until they soften, about 5 minutes.
  2. Incorporate the minced garlic and cook for another minute until fragrant.
  3. Season the chicken thighs with salt and black pepper, then place them in the pot to brown on both sides for approximately 5 minutes.
  4. Add the chopped tomatoes, chicken stock, cumin, coriander, smoked paprika, cayenne pepper, and oregano to the pot. Bring to a boil, then lower the heat and let it simmer for 30-35 minutes, or until the chicken is fully cooked and tender.
  5. While the stew simmers, toast the pumpkin seeds and sesame seeds in a separate dry skillet over medium heat for about 3-5 minutes, stirring frequently until golden and fragrant.
  6. Once the chicken is ready, remove it from the pot, shred the meat, and discard the bones and skin. Return the shredded chicken to the pot and mix well.
  7. Stir in the lime juice and chopped cilantro just before serving. Sprinkle the toasted seeds on top of each serving for extra crunch.

Notes

  • For a richer flavor, consider adding 1/2 cup of coconut milk during the last 10 minutes of cooking.
  • If you prefer a spicier kick, add chopped jalapeños or a splash of hot sauce when adding the tomatoes.
