- 1 pound ground beef
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 6 large eggs
- 1/4 cup milk
- 1/2 cup diced bell peppers (optional)
- 1/4 cup chopped green onions (optional)
Instructions
- Preheat your oven to 400°F.
- In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain any excess fat.
- Stir in garlic powder, onion powder, salt, and black pepper. Remove from heat and let cool slightly.
- In a mixing bowl, combine the shredded cheddar cheese with the cooked ground beef, mixing well.
- Grease a muffin tin with cooking spray or oil. Press the beef and cheese mixture into the bottom and up the sides of each muffin cup to form a crust.
- In another bowl, whisk together the eggs and milk. If using, stir in the diced bell peppers and green onions.
- Pour the egg mixture evenly into each beef crust, filling them about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the eggs are set and the tops are slightly golden.
- Allow to cool for a few minutes before carefully removing the breakfast cups from the muffin tin.
- Serve warm and enjoy!
