  • 1 pound ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 cup diced bell peppers (optional)
  • 1/4 cup chopped green onions (optional)

Instructions

  1. Preheat your oven to 400°F.
  2. In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain any excess fat.
  3. Stir in garlic powder, onion powder, salt, and black pepper. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the shredded cheddar cheese with the cooked ground beef, mixing well.
  5. Grease a muffin tin with cooking spray or oil. Press the beef and cheese mixture into the bottom and up the sides of each muffin cup to form a crust.
  6. In another bowl, whisk together the eggs and milk. If using, stir in the diced bell peppers and green onions.
  7. Pour the egg mixture evenly into each beef crust, filling them about 3/4 full.
  8. Bake in the preheated oven for 20-25 minutes, or until the eggs are set and the tops are slightly golden.
  9. Allow to cool for a few minutes before carefully removing the breakfast cups from the muffin tin.
