A delicious and refreshing salad featuring grilled peaches and halloumi cheese, drizzled with balsamic glaze.

- 3 ripe peaches, halved and pitted
- 8 ounces halloumi cheese, sliced into ½-inch thick pieces
- 4 cups mixed salad greens (such as arugula, spinach, and romaine)
- ¼ cup walnuts, toasted
- ¼ cup crumbled feta cheese
- ¼ cup balsamic glaze
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Brush the peach halves with olive oil and season with a pinch of salt and pepper.
- Place the peaches cut side down on the grill and cook for about 4-5 minutes, until grill marks appear and the peaches are slightly softened.
- While the peaches are grilling, place the halloumi slices on the grill. Grill for about 2-3 minutes on each side, until golden brown and slightly melted.
- In a large bowl, combine the mixed salad greens, toasted walnuts, and crumbled feta cheese.
- Once the peaches and halloumi are done, remove them from the grill and let them cool slightly. Slice the peaches into wedges.
- Add the grilled peaches and halloumi to the salad bowl. Drizzle with balsamic glaze and toss gently to combine.
- Serve immediately, garnished with additional balsamic glaze if desired.
Notes
- For a sweeter touch, drizzle honey over the grilled peaches before serving.
- You can also substitute the halloumi with goat cheese for a creamier texture.
