Description

A delicious and refreshing salad featuring grilled peaches and halloumi cheese, drizzled with balsamic glaze.


Ingredients

  • 3 ripe peaches, halved and pitted
  • 8 ounces halloumi cheese, sliced into ½-inch thick pieces
  • 4 cups mixed salad greens (such as arugula, spinach, and romaine)
  • ¼ cup walnuts, toasted
  • ¼ cup crumbled feta cheese
  • ¼ cup balsamic glaze
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the peach halves with olive oil and season with a pinch of salt and pepper.
  3. Place the peaches cut side down on the grill and cook for about 4-5 minutes, until grill marks appear and the peaches are slightly softened.
  4. While the peaches are grilling, place the halloumi slices on the grill. Grill for about 2-3 minutes on each side, until golden brown and slightly melted.
  5. In a large bowl, combine the mixed salad greens, toasted walnuts, and crumbled feta cheese.
  6. Once the peaches and halloumi are done, remove them from the grill and let them cool slightly. Slice the peaches into wedges.
  7. Add the grilled peaches and halloumi to the salad bowl. Drizzle with balsamic glaze and toss gently to combine.
  8. Serve immediately, garnished with additional balsamic glaze if desired.

Notes

  • For a sweeter touch, drizzle honey over the grilled peaches before serving.
  • You can also substitute the halloumi with goat cheese for a creamier texture.
