A delicious flatbread topped with sweet grilled peaches and savory prosciutto, perfect for a summer appetizer or light meal.

Ingredients

Scale
  • 1 flatbread
  • 2 ripe peaches, halved and pitted
  • 4 ounces prosciutto, thinly sliced
  • 1 cup arugula
  • 1/2 cup goat cheese, crumbled
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium heat.
  2. Brush the peach halves with olive oil and season with salt and pepper.
  3. Grill the peaches cut-side down for about 4-5 minutes until grill marks appear and they are slightly softened.
  4. Remove the peaches from the grill and let them cool slightly before slicing them into wedges.
  5. Place the flatbread on the grill and cook for 2-3 minutes on each side until crispy.
  6. Once the flatbread is ready, layer the prosciutto, grilled peach wedges, arugula, and crumbled goat cheese on top.
  7. Drizzle with additional olive oil if desired and serve immediately.

Notes

  • For a vegetarian option, omit the prosciutto.
  • Feel free to add a drizzle of balsamic glaze for extra flavor.
  • This dish pairs well with a light white wine.
