- 1 flatbread
- 2 ripe peaches, halved and pitted
- 4 ounces prosciutto, thinly sliced
- 1 cup arugula
- 1/2 cup goat cheese, crumbled
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the grill to medium heat.
- Brush the peach halves with olive oil and season with salt and pepper.
- Grill the peaches cut-side down for about 4-5 minutes until grill marks appear and they are slightly softened.
- Remove the peaches from the grill and let them cool slightly before slicing them into wedges.
- Place the flatbread on the grill and cook for 2-3 minutes on each side until crispy.
- Once the flatbread is ready, layer the prosciutto, grilled peach wedges, arugula, and crumbled goat cheese on top.
- Drizzle with additional olive oil if desired and serve immediately.
Notes
- For a vegetarian option, omit the prosciutto.
- Feel free to add a drizzle of balsamic glaze for extra flavor.
