Ingredients

- 200g halloumi cheese
- 4 slices of whole grain bread
- 2 cups of mixed salad greens
- 1 large tomato, sliced
- 1 avocado, sliced
- 1/4 cup of mayonnaise
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Slice the halloumi cheese into thick strips.
- Brush the halloumi with olive oil and season with salt and pepper.
- Grill the halloumi for 2-3 minutes on each side until golden brown.
- Toast the whole grain bread slices on the grill until crispy.
- In a large bowl, combine the mixed salad greens, sliced tomato, and avocado.
- Spread mayonnaise on the toasted bread.
- Assemble the salad by placing the grilled halloumi on top of the greens and serving with the toasted bread.
Notes
- For a vegan option, substitute halloumi with grilled tofu.
- Feel free to add other vegetables like cucumber or bell peppers.
