- 1 lb ground chicken
- 1/3 cup breadcrumbs (panko or regular)
- 1 egg
- 1/4 cup Parmesan cheese, grated
- 2 garlic cloves, minced
- 1 small onion, grated
- 2 tbsp fresh parsley, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp olive oil
Instructions
- Preheat the grill to medium-high heat.
- In a large bowl, mix ground chicken, breadcrumbs, egg, Parmesan, garlic, onion, parsley, salt, pepper, and red pepper flakes.
- Form the mixture into 1 to 1.5-inch meatballs and place them on a tray. Brush lightly with olive oil.
- Grill the meatballs for 4-5 minutes per side, turning until evenly browned and cooked through. Internal temperature should reach 165°F (74°C).
- Remove from the grill and let rest for a few minutes before serving.
Notes
- You can freeze the uncooked meatballs for up to 3 months.
- These meatballs can also be baked at 400°F (200°C) for 15-20 minutes.
