Description

These grilled chicken meatballs are packed with flavor, light, and healthy. Perfect for any meal, they are easy to make and versatile enough for various dishes.


Ingredients

  • 1 lb ground chicken
  • 1/3 cup breadcrumbs (panko or regular)
  • 1 egg
  • 1/4 cup Parmesan cheese, grated
  • 2 garlic cloves, minced
  • 1 small onion, grated
  • 2 tbsp fresh parsley, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp olive oil

Instructions

  • Preheat the grill to medium-high heat.
  • In a large bowl, mix ground chicken, breadcrumbs, egg, Parmesan, garlic, onion, parsley, salt, pepper, and red pepper flakes.
  • Form the mixture into 1 to 1.5-inch meatballs and place them on a tray. Brush lightly with olive oil.
  • Grill the meatballs for 4-5 minutes per side, turning until evenly browned and cooked through. Internal temperature should reach 165°F (74°C).
  • Remove from the grill and let rest for a few minutes before serving.

Notes

  • You can freeze the uncooked meatballs for up to 3 months.
  • These meatballs can also be baked at 400°F (200°C) for 15-20 minutes.
