Delicious grilled cherry-maple pork bites served with a tangy balsamic gelée.
Ingredients

- 500g pork tenderloin, cut into bite-sized cubes
- 1 cup fresh or frozen cherries, pitted
- 2 tbsp pure maple syrup
- 2 tbsp soy sauce
- 1 garlic clove, minced
- Salt and pepper to taste
- Skewers (soaked if wooden)
- 1 cup balsamic vinegar
- 1 tbsp sugar
- 1 tsp agar-agar powder (or gelatin)
Instructions
- Marinate the pork: In a bowl, mix cherries, maple syrup, soy sauce, garlic, salt, and pepper. Add pork cubes and marinate for at least 1 hour (or overnight).
- Make balsamic gelée: In a saucepan, heat balsamic vinegar and sugar until simmering. Sprinkle agar-agar powder, whisking constantly. Simmer for 2 minutes. Pour into a shallow dish, refrigerate until set (about 1 hour). Cut into small cubes or shards.
- Grill pork bites: Thread pork cubes onto skewers. Grill over medium-high heat for 8–10 minutes, turning, until cooked and caramelized.
- Serve: Plate pork bites with balsamic gelée pieces on the side or drizzled over.
Notes
- For best flavor, marinate the pork overnight.
- Ensure skewers are soaked if using wooden ones to prevent burning.
