- 2 pounds fresh sardines, cleaned and scaled
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 1 tablespoon smoked paprika
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 teaspoon cayenne pepper (adjust to taste)
- 4 cloves garlic, minced
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh cilantro, chopped
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- In a bowl, whisk together the olive oil, lemon juice, smoked paprika, ground cumin, ground coriander, cayenne pepper, minced garlic, salt, and pepper to create the chermoula marinade.
- Place the cleaned sardines in a large dish and pour the chermoula marinade over them, ensuring they are well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Preheat your grill to medium-high heat.
- Remove the sardines from the marinade and let any excess drip off.
- Grill the sardines for about 3-4 minutes on each side, or until they are cooked through and have nice grill marks. Be gentle when flipping to avoid breaking them apart.
- Once cooked, transfer the sardines to a serving platter and sprinkle with fresh parsley and cilantro. Serve with lemon wedges on the side.
Notes
- For a spicier kick, add more cayenne pepper or serve with a spicy dipping sauce.
- If sardines are not available, this marinade works well with other fish like mackerel or trout.
