Ingredients

  • 2 pounds fresh sardines, cleaned and scaled
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 tablespoon smoked paprika
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 4 cloves garlic, minced
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. In a bowl, whisk together the olive oil, lemon juice, smoked paprika, ground cumin, ground coriander, cayenne pepper, minced garlic, salt, and pepper to create the chermoula marinade.
  2. Place the cleaned sardines in a large dish and pour the chermoula marinade over them, ensuring they are well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  3. Preheat your grill to medium-high heat.
  4. Remove the sardines from the marinade and let any excess drip off.
  5. Grill the sardines for about 3-4 minutes on each side, or until they are cooked through and have nice grill marks. Be gentle when flipping to avoid breaking them apart.
  6. Once cooked, transfer the sardines to a serving platter and sprinkle with fresh parsley and cilantro. Serve with lemon wedges on the side.

Notes

  • For a spicier kick, add more cayenne pepper or serve with a spicy dipping sauce.
  • If sardines are not available, this marinade works well with other fish like mackerel or trout.
