- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)

Instructions
- Cut the beef sirloin into 1-inch cubes and place them in a large bowl.
- In a separate small bowl, mix together the bone marrow fat, olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Pour the marinade over the beef cubes and toss to coat evenly.
- Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Preheat your grill to medium-high heat.
- Thread the marinated beef cubes onto the skewers, leaving a little space between each piece for even cooking.
- Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the beef reaches your desired level of doneness (medium-rare is about 135°F).
- During the last few minutes of grilling, brush the skewers with any remaining marinade for added flavor.
- Remove the skewers from the grill and let them rest for 5 minutes.
- Garnish with chopped parsley before serving.

- For a spicier kick, add 1 teaspoon of cayenne pepper to the marinade.
