  • 4 tablespoons bone marrow fat (or beef tallow)
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Wooden or metal skewers

Instructions

  1. Cut the beef sirloin into 1-inch cubes and place them in a large bowl.
  2. In a separate small bowl, mix together the bone marrow fat, olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Pour the marinade over the beef cubes and toss to coat evenly.
  4. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  5. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  6. Preheat your grill to medium-high heat.
  7. Thread the marinated beef cubes onto the skewers, leaving a little space between each piece for even cooking.
  8. Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the beef reaches your desired level of doneness (medium-rare is about 135°F).
  9. During the last few minutes of grilling, brush the skewers with any remaining marinade for added flavor.
  10. Remove the skewers from the grill and let them rest for 5 minutes.
  11. Garnish with chopped parsley before serving.
