  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • 4 cups assorted salad greens (such as butter lettuce, kale, and watercress)
  • 1 cup halved grape tomatoes
  • 1 cucumber, diced
  • 1/4 red bell pepper, thinly sliced
  • 1/4 cup lemon-herb dressing

Instructions

  1. Heat your grill to a medium-high temperature.
  2. In a mixing bowl, combine the olive oil, onion powder, smoked paprika, sea salt, and black pepper.
  3. Generously coat both sides of the barramundi fillets with the mixture.
  4. Grill the fish for approximately 4-5 minutes per side, or until it flakes easily with a fork.
  5. In a small saucepan, melt the clarified butter over low heat.
  6. Stir in the lemon juice and zest, then set aside.
  7. In a large salad bowl, toss together the assorted greens, grape tomatoes, diced cucumber, and red bell pepper.
