  • 1 can (14 ounces) coconut milk
  • 1 pound green bananas, peeled and cut into thick slices
  • 1 cup vegetable broth
  • Salt to taste
  • 1 tablespoon lime juice
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  3. Add the ground cumin, ground coriander, turmeric, and red chili powder. Stir well and cook for another 2 minutes to toast the spices.
  4. Pour in the coconut milk and vegetable broth, stirring to combine. Bring the mixture to a gentle simmer.
  5. Add the sliced green bananas and season with salt. Cover and cook for about 20 minutes, or until the bananas are tender, stirring occasionally.
  6. Once the bananas are cooked, stir in the lime juice and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh cilantro.
