- 1 tablespoon fresh ginger, grated

- 1 teaspoon ground coriander

- 1/2 teaspoon red chili powder (adjust to taste)
- 1 can (14 ounces) coconut milk
- 1 pound green bananas, peeled and cut into thick slices
- 1 cup vegetable broth
- Salt to taste
- 1 tablespoon lime juice
- Fresh cilantro, chopped (for garnish)
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Add the ground cumin, ground coriander, turmeric, and red chili powder. Stir well and cook for another 2 minutes to toast the spices.
- Pour in the coconut milk and vegetable broth, stirring to combine. Bring the mixture to a gentle simmer.
- Add the sliced green bananas and season with salt. Cover and cook for about 20 minutes, or until the bananas are tender, stirring occasionally.
- Once the bananas are cooked, stir in the lime juice and adjust seasoning if necessary.
- Serve hot, garnished with fresh cilantro.

- For added protein, consider adding chickpeas or lentils to the curry during the cooking process.
