- 2 large leeks, cleaned and sliced (white and light green parts only)
- 1 cup long-grain rice
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 3 cups vegetable broth
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 tablespoon fresh lemon juice
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until translucent.
- Add the sliced leeks and minced garlic to the skillet. Cook for another 5-7 minutes, stirring occasionally, until the leeks are softened.
- Stir in the rice and cook for 2 minutes, allowing it to toast slightly.
- Pour in the vegetable broth and add the dried oregano, salt, and pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the skillet, and simmer for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and stir in the fresh lemon juice. Let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork and garnish with chopped parsley before serving.
Notes
- For added protein, consider mixing in cooked chickpeas or shredded chicken before serving.
- You can substitute brown rice for a nuttier flavor and increased fiber, but adjust the cooking time to about 40-45 minutes.
