  • 2 large leeks, cleaned and sliced (white and light green parts only)
  • 1 cup long-grain rice
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon fresh lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until translucent.
  2. Add the sliced leeks and minced garlic to the skillet. Cook for another 5-7 minutes, stirring occasionally, until the leeks are softened.
  3. Stir in the rice and cook for 2 minutes, allowing it to toast slightly.
  4. Pour in the vegetable broth and add the dried oregano, salt, and pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover the skillet, and simmer for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  6. Remove from heat and stir in the fresh lemon juice. Let it sit, covered, for an additional 5 minutes.
  7. Fluff the rice with a fork and garnish with chopped parsley before serving.

Notes

  • For added protein, consider mixing in cooked chickpeas or shredded chicken before serving.
  • You can substitute brown rice for a nuttier flavor and increased fiber, but adjust the cooking time to about 40-45 minutes.
