Ingredients

  • 1 lb chicken breast
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 lemon (juice + zest)
  • ½ cup chopped parsley

Instructions

  1. Season chicken with oregano, garlic, salt, and pepper. Brown in oil in a pot. Remove.
  2. Add rice, broth, lemon juice, and zest. Bring to a boil.
  3. Return chicken to pot. Cover and simmer for 20 minutes.
  4. Garnish with parsley.
