Ingredients

- 1 lb chicken breast
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 lemon (juice + zest)
- ½ cup chopped parsley
Instructions
- Season chicken with oregano, garlic, salt, and pepper. Brown in oil in a pot. Remove.
- Add rice, broth, lemon juice, and zest. Bring to a boil.
- Return chicken to pot. Cover and simmer for 20 minutes.
- Garnish with parsley.
