Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish by greasing it or lining it with parchment paper.
  2. In a mixing bowl, blend the flour, confectioners’ sugar, softened butter, and sea salt until the texture resembles sand. Press this mixture into the bottom of the prepared baking dish.
  3. Bake the crust for about 15 minutes, or until it turns a light golden brown.
  4. In a large bowl, whisk the eggs and granulated sugar together until smooth and creamy. Add the grapefruit juice, zest, baking powder, and vanilla extract, stirring until well combined.
  5. Once the crust is ready, pour the citrus filling over it and return the dish to the oven. Bake for an additional 20-25 minutes, or until the filling has set and feels slightly firm.
  6. Allow the squares to cool in the pan on a wire rack. Once at room temperature, chill in the refrigerator for at least 2 hours before slicing into squares.
