- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup freshly squeezed grapefruit juice (about 1 large grapefruit)
- Zest from 1 grapefruit
- 1/4 teaspoon baking powder
- 1/4 teaspoon pure vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish by greasing it or lining it with parchment paper.
- In a mixing bowl, blend the flour, confectioners’ sugar, softened butter, and sea salt until the texture resembles sand. Press this mixture into the bottom of the prepared baking dish.
- Bake the crust for about 15 minutes, or until it turns a light golden brown.
- In a large bowl, whisk the eggs and granulated sugar together until smooth and creamy. Add the grapefruit juice, zest, baking powder, and vanilla extract, stirring until well combined.
- Once the crust is ready, pour the citrus filling over it and return the dish to the oven. Bake for an additional 20-25 minutes, or until the filling has set and feels slightly firm.
- Allow the squares to cool in the pan on a wire rack. Once at room temperature, chill in the refrigerator for at least 2 hours before slicing into squares.

- For added flavor, consider mixing in a tablespoon of honey or agave syrup into the filling.
- Swapping grapefruit juice for lemon juice can give a refreshing twist.
