Instructions
- Preheat your oven to 350°F (175°C) and lightly grease an 8-inch square baking dish.
- In a medium pot, combine the chopped dates with boiling water and let sit for 10 minutes. Mix in the baking soda and set aside to cool.
- In a large bowl, beat the softened butter and brown sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, combine the flour, baking powder, and sea salt. Gradually fold this dry mixture into the butter and sugar mixture, alternating with the cooled date mixture until just blended.
- Transfer the batter into the prepared baking dish and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake bakes, prepare the sauce by mixing the heavy whipping cream, brown sugar, butter, and vanilla extract in a saucepan over medium heat. Stir until the sugar dissolves, then simmer for about 5 minutes until smooth.
- Once the cake is baked, let it cool for a few minutes before slicing into squares. Serve warm with the toffee sauce drizzled generously on top.
