Description

A delicious and indulgent recipe for Gordon Ramsay’s Sticky Toffee Pudding, featuring a moist date cake topped with a rich toffee sauce.

Ingredients

Scale
  • 2 cups chopped pitted dates
  • 1 ½ cups boiling water
  • 1 teaspoon baking soda
  • ½ cup softened unsalted butter
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • 1 cup heavy whipping cream
  • 1 cup brown sugar (for the sauce)
  • 4 tablespoons unsalted butter (for the sauce)
  • 1 teaspoon pure vanilla extract (for the sauce)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease an 8-inch square baking dish.
  2. In a medium pot, combine the chopped dates with boiling water and let sit for 10 minutes. Mix in the baking soda and set aside to cool.
  3. In a large bowl, beat the softened butter and brown sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, combine the flour, baking powder, and sea salt. Gradually fold this dry mixture into the butter and sugar mixture, alternating with the cooled date mixture until just blended.
  5. Transfer the batter into the prepared baking dish and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. While the cake bakes, prepare the sauce by mixing the heavy whipping cream, brown sugar, butter, and vanilla extract in a saucepan over medium heat. Stir until the sugar dissolves, then simmer for about 5 minutes until smooth.
  7. Once the cake is baked, let it cool for a few minutes before slicing into squares. Serve warm with the toffee sauce drizzled generously on top.

Notes

  • For added flavor, sprinkle a pinch of sea salt into the sauce.
  • Pair with vanilla ice cream or whipped cream for an extra treat.
  • Consider mixing in chopped nuts or chocolate chips into the batter for a fun variation.
