  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil
  • 4 tablespoons salted butter
  • Fresh herbs (such as thyme or parsley) for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the goose legs dry with paper towels to ensure crispy skin.
  3. In a small bowl, combine the kosher salt, black pepper, garlic powder, onion powder, and dried thyme. Rub this spice mixture all over the goose legs, making sure to get it under the skin as well.
  4. Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the goose legs skin-side down and sear for about 5-7 minutes, or until the skin is golden brown and crispy.
  5. Flip the goose legs over and add the salted butter to the skillet. Spoon the melted butter over the legs to baste them.
  6. Transfer the skillet to the preheated oven and roast for 1 hour, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
  7. Remove the skillet from the oven and let the goose legs rest for 10 minutes before serving. Garnish with fresh herbs if desired.

  • For a richer flavor, try adding a splash of white wine to the skillet before roasting.
