A delicious and healthy recipe for Golden Ginger Crunch Pebbles that is both vegan and gluten-free.

- 2 cups gluten-free rolled oats
- 1 cup almond flour
- 1/2 cup coconut oil, melted
- 1/2 cup maple syrup
- 1/4 cup ground ginger
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup chopped crystallized ginger
- 1/2 cup shredded coconut (unsweetened)
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
- In a large mixing bowl, combine the rolled oats, almond flour, ground ginger, cinnamon, and salt. Stir until well mixed.
- In a separate bowl, whisk together the melted coconut oil and maple syrup until combined.
- Pour the wet ingredients into the dry ingredients and mix until everything is evenly coated. Fold in the chopped crystallized ginger, shredded coconut, and walnuts if using.
- Transfer the mixture to the prepared baking dish and press it down firmly with a spatula to create an even layer.
- Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown.
- Remove from the oven and let cool in the pan for about 10 minutes. Then, lift the parchment paper to remove the bars from the pan and allow them to cool completely on a wire rack.
- Once cooled, cut into squares or bars and enjoy!
Notes
- For added sweetness, drizzle a little extra maple syrup over the top before serving.
- Substitute the walnuts with any nuts or seeds of your choice for a different flavor and texture.
