- 2 cups gingerbread cookies, crushed
- 8 ounces cream cheese, softened
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg

- 1 teaspoon vanilla extract
- 1 cup white chocolate chips
- 1 tablespoon coconut oil
- 1/4 cup crushed pecans or walnuts (optional for rolling)
Instructions
- In a large mixing bowl, combine the crushed gingerbread cookies, softened cream cheese, ground ginger, ground cinnamon, ground nutmeg, ground cloves, and vanilla extract. Mix until well combined and a dough forms.
- Using your hands, roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to firm up.
- In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- Dip each chilled truffle into the melted white chocolate, allowing any excess to drip off. If desired, roll the truffles in crushed pecans or walnuts before placing them back on the parchment-lined baking sheet.
- Refrigerate the truffles for an additional 15-20 minutes to set the chocolate. Serve chilled or at room temperature.
Notes
- For a spicier flavor, add an extra 1/4 teaspoon of ground ginger or cinnamon to the mixture.
- You can also substitute the white chocolate with dark chocolate for a richer taste.
