Gingerbread Churro Cheesecake Bars are a must-try treat that combines the flavors of gingerbread and churros in a delicious cheesecake form.

- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon

- 16 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup sour cream
- 1 tablespoon all-purpose flour
- 1/4 cup granulated sugar (for topping)
- 1 teaspoon ground cinnamon (for topping)
- 1/4 cup caramel sauce (optional, for drizzling)
Instructions
- Preheat the oven to 350°F. Line a 9×13-inch baking dish with parchment paper, leaving some overhang for easy removal later.
- In a medium bowl, combine the graham cracker crumbs, melted butter, 1/4 cup granulated sugar, 1 teaspoon cinnamon, ginger, nutmeg, and salt. Mix until well combined. Press the mixture firmly into the bottom of the prepared baking dish to form the crust.
- In a large mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, mixing until fully combined. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream and flour until smooth.
- Pour the cheesecake mixture over the graham cracker crust and spread it evenly. Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center is slightly jiggly. Remove from the oven and let cool at room temperature for about 30 minutes.
- In a small bowl, combine the remaining 1/4 cup granulated sugar and 1 teaspoon cinnamon. Once the cheesecake bars have cooled, sprinkle the cinnamon-sugar mixture evenly over the top.
- Refrigerate the cheesecake bars for at least 2 hours, or until fully chilled and set. Once chilled, lift the bars out of the pan using the parchment overhang and cut into squares. Drizzle with caramel sauce if desired before serving.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the crust mixture.
- You can also substitute the sour cream with Greek yogurt for a tangier flavor.
