- 2 large eggs
- 1 cup granulated sugar

- 1 teaspoon ground ginger
- 1 teaspoon ground turmeric
- 1/2 teaspoon baking powder
- 1/4 teaspoon ground black pepper
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
- In a medium bowl, combine the flour, powdered sugar, softened butter, and salt. Mix until the mixture resembles coarse crumbs. Press the mixture evenly into the bottom of the prepared baking dish to form the crust.
- Bake the crust in the preheated oven for 15 minutes, or until lightly golden.
- While the crust is baking, prepare the filling. In a large bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, ground ginger, ground turmeric, baking powder, and black pepper until well combined.
- Pour the filling over the baked crust and return it to the oven. Bake for an additional 20-25 minutes, or until the filling is set and the edges are lightly golden.
- Remove from the oven and let cool completely in the baking dish on a wire rack. Once cooled, dust with powdered sugar, if desired, and cut into squares.
Notes
- For a gluten-free version, substitute the all-purpose flour with a 1:1 gluten-free baking blend.
- Add a pinch of cayenne pepper to the filling for an extra kick of heat and flavor.
