Ginger-Spiced Almond Butter Kisses are a delightful treat combining the warmth of ginger and cinnamon with the richness of almond butter and dark chocolate.


Ingredients

  • 1 cup almond butter
  • 1/2 cup honey
  • 1/4 cup coconut flour
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almond butter, honey, coconut flour, ground ginger, cinnamon, vanilla extract, and salt. Mix until well combined and a dough forms.
  3. Using a tablespoon, scoop out the dough and roll it into small balls (about 1 inch in diameter). Place the balls on the prepared baking sheet, leaving space between each.
  4. Gently press down on each ball with a fork to create a crisscross pattern.
  5. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  6. While the cookies are baking, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
  7. Once the cookies are done, remove them from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  8. Drizzle or dip the cooled cookies in the melted chocolate, then let them set on the parchment paper.

  • For a spicier kick, add a pinch of cayenne pepper to the dough.
