- 1 cup almond butter
- 1/2 cup honey
- 1/4 cup coconut flour
- 1 teaspoon ground ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond butter, honey, coconut flour, ground ginger, cinnamon, vanilla extract, and salt. Mix until well combined and a dough forms.
- Using a tablespoon, scoop out the dough and roll it into small balls (about 1 inch in diameter). Place the balls on the prepared baking sheet, leaving space between each.
- Gently press down on each ball with a fork to create a crisscross pattern.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- While the cookies are baking, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Once the cookies are done, remove them from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Drizzle or dip the cooled cookies in the melted chocolate, then let them set on the parchment paper.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the dough.
- Substitute maple syrup for honey for a vegan-friendly option.
