- 2 cups almond flour
- 1/2 cup erythritol or your preferred keto sweetener
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup sugar-free chocolate chips
Instructions
- Preheat your air fryer to 320°F (160°C).
- In a large mixing bowl, combine almond flour, erythritol, baking soda, and salt. Mix well.
- In another bowl, cream together the softened butter, egg, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, stirring until fully combined.
- Fold in the sugar-free chocolate chips.
- Line the air fryer basket with parchment paper.
- Scoop the cookie dough into the basket and flatten it into a large cookie shape, about 1 inch thick.
- Cook in the air fryer for 10-12 minutes, or until the edges are golden brown.
- Allow the cookie to cool in the basket for 5 minutes before transferring it to a wire rack to cool completely.
Notes
- For added flavor, mix in a teaspoon of cinnamon or a pinch of sea salt on top before cooking.
- You can substitute the almond flour with coconut flour, but use only 1/2 cup and increase the liquid slightly to maintain the dough consistency.
