Ingredients

  • 2 cups long-grain parboiled rice
  • 1 pound smoked chicken thighs
  • 1/4 cup vegetable oil
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1/4 cup tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 3 cups chicken broth
  • 1 cup frozen peas
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain and set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
  4. Add the chopped red and green bell peppers, cooking for another 3-4 minutes until softened.
  5. Pour in the diced tomatoes and tomato paste, stirring to combine. Cook for 5 minutes, allowing the mixture to thicken slightly.
  6. Add the thyme, curry powder, paprika, salt, and black pepper. Stir well to incorporate the spices.
  7. Add the rinsed rice to the pot, stirring to coat the rice with the tomato mixture.
  8. Pour in the chicken broth, bringing the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  9. While the rice is cooking, preheat the oven to 375°F. Place the smoked chicken thighs on a baking sheet and heat in the oven for about 15-20 minutes until warmed through.
  10. Once the rice is done, fluff it with a fork and gently fold in the frozen peas. Cover and let it sit for an additional 5 minutes.
  11. Serve the Jollof rice topped with the smoked chicken thighs and garnish with chopped parsley.

  • For extra flavor, marinate the smoked chicken thighs in a mixture of olive oil, garlic, and herbs before baking.
