A delicious recipe for Ghanaian Jollof Rice paired with smoked chicken thighs, perfect for any occasion.

- 2 cups long-grain parboiled rice
- 1 pound smoked chicken thighs
- 1/4 cup vegetable oil
- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 can (14.5 ounces) diced tomatoes
- 1/4 cup tomato paste
- 1 teaspoon thyme
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 3 cups chicken broth
- 1 cup frozen peas
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Rinse the rice under cold water until the water runs clear. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the chopped red and green bell peppers, cooking for another 3-4 minutes until softened.
- Pour in the diced tomatoes and tomato paste, stirring to combine. Cook for 5 minutes, allowing the mixture to thicken slightly.
- Add the thyme, curry powder, paprika, salt, and black pepper. Stir well to incorporate the spices.
- Add the rinsed rice to the pot, stirring to coat the rice with the tomato mixture.
- Pour in the chicken broth, bringing the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, preheat the oven to 375°F. Place the smoked chicken thighs on a baking sheet and heat in the oven for about 15-20 minutes until warmed through.
- Once the rice is done, fluff it with a fork and gently fold in the frozen peas. Cover and let it sit for an additional 5 minutes.
- Serve the Jollof rice topped with the smoked chicken thighs and garnish with chopped parsley.

- For extra flavor, marinate the smoked chicken thighs in a mixture of olive oil, garlic, and herbs before baking.
- You can substitute the smoked chicken with grilled shrimp or tofu for a different protein option.
