A flavorful recipe for German Red Cabbage, perfect as a side dish.

- 1 medium head red cabbage, shredded (about 4 cups)
- 1 medium onion, thinly sliced
- 2 tablespoons olive oil
- 1 medium apple, peeled, cored, and chopped
- 1/4 cup apple cider vinegar
- 1/4 cup water
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 bay leaf
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes.
- Stir in the shredded red cabbage and chopped apple. Cook for another 5 minutes, stirring occasionally.
- Add the apple cider vinegar, water, brown sugar, cinnamon, cloves, salt, pepper, and bay leaf. Stir well to combine.
- Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for about 45 minutes, stirring occasionally, until the cabbage is tender.
- Remove the bay leaf before serving. Adjust seasoning if necessary.
Notes
- For a tangier flavor, add an extra tablespoon of apple cider vinegar or a splash of lemon juice before serving.
- You can add raisins or cranberries for a touch of sweetness and texture. Just stir them in during the last 10 minutes of cooking.
