  • 1 medium head red cabbage, shredded (about 4 cups)
  • 1 medium onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 medium apple, peeled, cored, and chopped
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bay leaf

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes.
  2. Stir in the shredded red cabbage and chopped apple. Cook for another 5 minutes, stirring occasionally.
  3. Add the apple cider vinegar, water, brown sugar, cinnamon, cloves, salt, pepper, and bay leaf. Stir well to combine.
  4. Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for about 45 minutes, stirring occasionally, until the cabbage is tender.
  5. Remove the bay leaf before serving. Adjust seasoning if necessary.

Notes

  • For a tangier flavor, add an extra tablespoon of apple cider vinegar or a splash of lemon juice before serving.
  • You can add raisins or cranberries for a touch of sweetness and texture. Just stir them in during the last 10 minutes of cooking.
