- 1/2 cup buttermilk
- For the Coconut-Pecan Filling:
- 1/2 cup butter
- 1/2 cup sweetened condensed milk
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 1 cup sweetened shredded coconut
- 1/2 cup chopped pecans
Instructions
- Preheat oven to 350°F and line baking sheets with parchment paper.
- Whisk together flour, cocoa powder, baking powder, and baking soda. Set aside.
- Cream butter and sugar until fluffy, then beat in egg and vanilla.
- Gradually add dry ingredients and buttermilk to the butter mixture.
- Drop batter onto baking sheets and bake for 10-12 minutes.
- Make the filling by melting butter and combining with sweetened condensed milk, brown sugar, and vanilla. Stir in coconut and pecans.
- Assemble whoopie pies by spreading filling between two cookies.
