  • For the Coconut-Pecan Filling:

    • 1/2 cup sweetened condensed milk
    • 1/2 cup brown sugar
    • 1 teaspoon vanilla extract
    • 1 cup sweetened shredded coconut
    • 1/2 cup chopped pecans

Instructions

  • Preheat oven to 350°F and line baking sheets with parchment paper.
  • Whisk together flour, cocoa powder, baking powder, and baking soda. Set aside.
  • Cream butter and sugar until fluffy, then beat in egg and vanilla.
  • Gradually add dry ingredients and buttermilk to the butter mixture.
  • Drop batter onto baking sheets and bake for 10-12 minutes.
  • Make the filling by melting butter and combining with sweetened condensed milk, brown sugar, and vanilla. Stir in coconut and pecans.
  • Assemble whoopie pies by spreading filling between two cookies.
