Delicious Georgian Walnut-Herb Eggplant Rolls filled with a flavorful walnut and herb mixture.
Ingredients

- 2 medium eggplants, cut into long strips about 1/4-inch thick
- 1 teaspoon sea salt
- 1 cup walnuts, lightly toasted
- 1/4 cup fresh cilantro, finely chopped
- 1/4 cup fresh parsley, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon red wine vinegar
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1/4 cup extra virgin olive oil
- Fresh lemon juice, to taste
Instructions
- Sprinkle the eggplant strips with sea salt and allow them to rest for 30 minutes to extract excess moisture.
- Rinse the slices under cold water and pat them dry with a kitchen towel.
- Heat a grill or grill pan to medium-high heat and lightly brush the eggplant strips with extra virgin olive oil.
- Grill the eggplant strips for 3-4 minutes on each side until they are soft and have nice grill marks.
- Remove from heat and let them cool down.
- In a food processor, combine the toasted walnuts, cilantro, parsley, minced garlic, red wine vinegar, ground coriander, ground cumin, black pepper, and optional cayenne pepper. Pulse until finely chopped, avoiding a puree.
- Take each grilled eggplant strip and spread a generous tablespoon of the walnut and herb filling along one end.
- Carefully roll the eggplant tightly and place each roll seam-side down on a serving dish.
- Before serving, drizzle the rolls with extra virgin olive oil and a squeeze of fresh lemon juice.
- Allow the rolls to rest for at least 15 minutes to enhance the flavors before enjoying.
Notes
- For an extra kick, consider mixing in a finely chopped jalapeño or a splash of your favorite hot sauce into the walnut filling.
- Feel free to swap out walnuts for pecans or almonds to create a unique flavor twist.
