- 1 can (15 oz) tuna, drained and crumbled
- 1/2 cup panko breadcrumbs
- 1/4 cup Greek yogurt
- 1 large egg
- 2 cloves garlic, finely chopped
- 1 tablespoon fresh lemon juice

- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon fresh dill, chopped (optional)
- 2 tablespoons canola oil (for frying)
- 4 cups assorted salad greens (e.g., kale, butter lettuce, endive)
- 1/2 cup grape tomatoes, quartered
- 1/4 bell pepper, thinly sliced
- 2 tablespoons lemon vinaigrette
Instructions
- In a mixing bowl, combine the crumbled tuna, panko breadcrumbs, Greek yogurt, egg, chopped garlic, lemon juice, lemon zest, sea salt, black pepper, and dill (if desired). Stir until the mixture is evenly blended.
- Form the mixture into 8 small fritters, each about 2 inches wide.
- In a skillet, heat the canola oil over medium heat. Once the oil is shimmering, carefully place the fritters in the pan and cook for approximately 4-5 minutes on each side, or until they are golden and crispy.
- While the fritters are frying, prepare the garden salad by combining the assorted greens, grape tomatoes, and bell pepper in a large bowl. Drizzle with lemon vinaigrette and toss gently to combine.
- Serve the warm tuna fritters alongside the fresh garden salad for a delightful meal.
Notes
- Feel free to add other vegetables to the salad as desired.
- For a spicier kick, consider adding some red pepper flakes to the fritter mixture.
