- 2 pounds Yukon Gold potatoes, thinly sliced
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F. Grease a 12-cup muffin pan with cooking spray or olive oil.
- In a large bowl, combine the thinly sliced potatoes, olive oil, minced garlic, thyme, rosemary, salt, and black pepper. Toss until the potatoes are well coated.
- Layer the potato mixture into each muffin cup, pressing down gently to pack them tightly. Sprinkle the grated Parmesan cheese evenly over the top of each galette.
- Bake in the preheated oven for 30-35 minutes, or until the potatoes are tender and the tops are golden brown.
- Allow to cool for 5 minutes before carefully removing the galettes from the muffin pan.
- Garnish with fresh parsley before serving.
