- 2 large zucchinis, sliced into thick rounds
- 2 tablespoons olive oil
- Salt and pepper to taste
- Skewers (wooden or metal)
- 3 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat grill or grill pan to medium heat.
- Toss zucchini slices in olive oil, salt, and pepper. Thread onto skewers.
- Grill for 2–3 minutes per side until tender and slightly charred.
- Meanwhile, melt butter in a small pan, then add garlic. Sauté for 1 minute.
- Remove from heat and stir in parsley.
- Brush garlic butter over skewers and serve hot.
