Ingredients

- 1 pound sirloin steak, diced into small cubes
- 2 medium zucchinis, cut into half-moon shapes
- 4 tablespoons unsalted butter
- 4 cloves garlic, finely chopped
- 1 teaspoon dried oregano
- 1 teaspoon sea salt
- ½ teaspoon freshly ground black pepper
- 2 tablespoons extra virgin olive oil
- Fresh parsley, chopped, for garnish
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Season the steak cubes with salt, pepper, and oregano.
- Add the steak to the skillet in a single layer and sear for 2-3 minutes on each side.
- Transfer the cooked steak to a plate and keep warm.
- In the same skillet, reduce the heat and add the butter and minced garlic.
- Sauté for about a minute until the garlic is fragrant.
- Add the zucchini and cook for 4-5 minutes until tender but still crunchy.
- Return the seared steak to the skillet and mix well with the zucchini and garlic butter.
- Heat through for an additional 1-2 minutes.
- Remove from heat and sprinkle with freshly chopped parsley before serving.
Notes
- For added flavor, marinate the steak cubes in soy sauce and Worcestershire sauce for 30 minutes before cooking.
- Substitute zucchini with bell peppers or asparagus for a different twist.
