  • 34 pounds bone-in prime rib roast
  • 1/4 cup room temperature unsalted butter
  • 6 cloves garlic, finely chopped
  • 2 tablespoons fresh rosemary, minced
  • 2 tablespoons fresh thyme, minced
  • 2 teaspoons sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 tablespoon extra virgin olive oil

Instructions

  1. Preheat your oven to 450°F.
  2. In a mixing bowl, blend the softened butter with the chopped garlic, minced rosemary, thyme, sea salt, black pepper, onion powder, and garlic powder until smooth.
  3. Dry the prime rib roast thoroughly with paper towels. Drizzle the olive oil over the roast and rub it in to coat the surface.
  4. Generously smear the garlic herb butter all over the roast, covering every inch.
  5. Position the roast bone-side down on a rack inside a roasting pan and place it in the hot oven for 20 minutes.
  6. Lower the oven temperature to 325°F and continue cooking for approximately 1.5 to 2 hours, or until the internal temperature reaches 130°F for medium-rare.
  7. Once cooked, remove the roast from the oven and cover it loosely with aluminum foil. Allow it to rest for 20-30 minutes.
  8. Carve the roast against the grain and serve with your favorite accompaniments.
