- 3–4 pounds bone-in prime rib roast
- 1/4 cup room temperature unsalted butter
- 6 cloves garlic, finely chopped
- 2 tablespoons fresh rosemary, minced
- 2 tablespoons fresh thyme, minced
- 2 teaspoons sea salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 tablespoon extra virgin olive oil
Instructions
- Preheat your oven to 450°F.
- In a mixing bowl, blend the softened butter with the chopped garlic, minced rosemary, thyme, sea salt, black pepper, onion powder, and garlic powder until smooth.
- Dry the prime rib roast thoroughly with paper towels. Drizzle the olive oil over the roast and rub it in to coat the surface.
- Generously smear the garlic herb butter all over the roast, covering every inch.
- Position the roast bone-side down on a rack inside a roasting pan and place it in the hot oven for 20 minutes.
- Lower the oven temperature to 325°F and continue cooking for approximately 1.5 to 2 hours, or until the internal temperature reaches 130°F for medium-rare.
- Once cooked, remove the roast from the oven and cover it loosely with aluminum foil. Allow it to rest for 20-30 minutes.
- Carve the roast against the grain and serve with your favorite accompaniments.
Notes
- For extra flavor, mix in a tablespoon of Dijon mustard with the garlic butter.
- Feel free to switch up the herbs by adding sage or oregano.
- For a more pronounced crust, broil the roast for the last 5 minutes of cooking.
