- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 bell pepper (any color), diced
- 1 carrot, grated
- 1/4 red onion, thinly sliced
- 1/2 cup croutons
- 1/4 cup feta cheese, crumbled (optional)
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large salad bowl, combine the mixed salad greens, cherry tomatoes, cucumber, bell pepper, carrot, and red onion. Toss gently to mix the vegetables evenly.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper until well combined.
- Drizzle the dressing over the salad and toss gently to coat all the ingredients.
- Top the salad with croutons and feta cheese, if using.
- Serve immediately for the freshest taste, or chill in the refrigerator for about 15 minutes before serving to enhance the flavors.
