Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 bell pepper (any color), diced
  • 1 carrot, grated
  • 1/4 red onion, thinly sliced
  • 1/2 cup croutons
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the mixed salad greens, cherry tomatoes, cucumber, bell pepper, carrot, and red onion. Toss gently to mix the vegetables evenly.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper until well combined.
  3. Drizzle the dressing over the salad and toss gently to coat all the ingredients.
  4. Top the salad with croutons and feta cheese, if using.
  5. Serve immediately for the freshest taste, or chill in the refrigerator for about 15 minutes before serving to enhance the flavors.
