Ingredients

  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup colorful star-shaped sprinkles
  • 1 cup blue and purple food coloring gel

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Divide the dough into two equal portions.
  7. In one portion, mix in the blue food coloring until you achieve your desired shade.
  8. In the other portion, mix in the purple food coloring.
  9. Using a tablespoon, scoop out small amounts of each colored dough and roll them into balls.
  10. Press the balls together to create a marbled effect and then flatten them slightly.
  11. Place the cookies on the prepared baking sheets, spacing them about 2 inches apart.
  12. Sprinkle the star-shaped sprinkles on top of each cookie.
  13. Bake for 10-12 minutes or until the edges are lightly golden.
  14. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a fun twist, try adding edible glitter on top of the cookies before baking for an extra galaxy effect.
