A delicious and refreshing summer treat made with horchata and coffee, perfect for hot days.
Ingredients

- 2 cups horchata
- 1 cup brewed coffee, cooled
- 1/2 cup milk (or dairy-free alternative)
- 1/4 cup sugar (adjust to taste)
- 1 teaspoon vanilla extract
Instructions
- In a mixing bowl, combine horchata, brewed coffee, milk, sugar, and vanilla extract.
- Stir the mixture until the sugar is fully dissolved.
- Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert sticks and freeze for at least 4-6 hours or until solid.
- To remove the pops, run warm water over the outside of the molds for a few seconds.
Notes
- For a creamier texture, use full-fat coconut milk.
- Adjust the sweetness according to your preference.
- These pops can be made ahead of time and stored in the freezer for up to a month.
