- 2 cups gingerbread cookie crumbs
- 1/2 cup unsalted butter, melted
- 1 cup heavy cream
- 1 cup sweetened condensed milk
- 1/2 cup caramel sauce, plus extra for drizzling
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup whipped topping
Instructions
- In a medium bowl, combine gingerbread cookie crumbs and melted butter. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9×9-inch baking dish to form a crust. Chill in the refrigerator for 15 minutes to set.
- In a large mixing bowl, whip the heavy cream until soft peaks form. Gradually add the sweetened condensed milk, caramel sauce, ground ginger, ground cinnamon, ground nutmeg, salt, and vanilla extract. Continue to whip until well combined and smooth.
- Gently fold in the whipped topping until fully incorporated. Pour the caramel mixture over the chilled gingerbread crust and spread evenly.
- Drizzle additional caramel sauce over the top of the filling. Cover the dish with plastic wrap and freeze for at least 4 hours, or until firm.
- Once frozen, remove from the freezer and let sit at room temperature for about 10 minutes before cutting into squares. Serve chilled.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the caramel mixture.
- Substitute the gingerbread cookie crumbs with graham cracker crumbs for a different flavor profile.
