- 2 ¾ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract

- 3 cups powdered sugar
- 2–3 tablespoons milk
- Food coloring (optional)
- Sprinkles (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Beat in the egg, vanilla extract, and almond extract until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
- Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 1 hour or until firm.
- On a lightly floured surface, roll out one disc of dough to about ¼ inch thick. Use cookie cutters to cut out shapes and place them on the prepared baking sheets.
- Bake for 8-10 minutes or until the edges are lightly golden. Let cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
- In a medium bowl, mix powdered sugar and 2 tablespoons of milk until smooth. If desired, add food coloring to create different colors. Adjust the consistency with more milk if needed.
- Once cookies are completely cool, frost with the icing and decorate with sprinkles if desired.
Notes
- For a fun twist, try adding citrus zest (like lemon or orange) to the dough for added flavor.
- You can substitute half of the all-purpose flour with almond flour for a nutty flavor and slightly different texture.
