Description

Frosted Cranberry Coconut Lace Bites are a delightful treat combining the sweetness of honey or maple syrup with the chewy texture of coconut and oats, topped with a drizzle of white chocolate.

Ingredients

Scale
  • 1 cup shredded unsweetened coconut
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 cup honey or maple syrup
  • 1/4 cup unsweetened dried cranberries, chopped
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup white chocolate chips (optional for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the shredded coconut, rolled oats, almond flour, baking soda, and salt. Mix well.
  3. In a separate bowl, whisk together the honey (or maple syrup), melted coconut oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until fully combined. Fold in the chopped cranberries.
  5. Using a tablespoon, drop spoonfuls of the mixture onto the prepared baking sheet, leaving space between each bite as they will spread while baking.
  6. Bake for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  7. If using, melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Drizzle the melted chocolate over the cooled lace bites. Allow the chocolate to set before serving.

Notes

  • For a nut-free version, substitute almond flour with sunflower seed flour.
  • Add a pinch of cinnamon or nutmeg to the dry ingredients for an extra layer of flavor.
