Frosted Coffee Brownies are a delicious and keto-friendly dessert combining rich chocolate and coffee flavors, topped with a creamy frosting.

- 1 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup granulated erythritol or your preferred keto sweetener
- 1/2 cup unsalted butter, melted
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon brewed coffee (cooled)
- 1/4 cup sugar-free chocolate chips (optional)
- Frosting:
- 1/4 cup unsweetened cocoa powder
- 1/4 cup cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1/4 cup powdered erythritol
- 1 tablespoon brewed coffee (cooled)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
- In a mixing bowl, combine almond flour, cocoa powder, baking powder, salt, and erythritol. Mix well.
- In another bowl, whisk together the melted butter, eggs, vanilla extract, and cooled brewed coffee until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. If using, fold in the sugar-free chocolate chips.
- Pour the brownie batter into the prepared baking pan and spread it evenly.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- While the brownies are baking, prepare the frosting. In a mixing bowl, beat together the cocoa powder, cream cheese, softened butter, powdered erythritol, cooled brewed coffee, and vanilla extract until smooth and creamy.
- Once the brownies are done, allow them to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
- Once cooled, spread the frosting evenly over the brownies. Cut into squares and serve.
Notes
- For a mocha flavor, add 1 teaspoon of instant coffee granules to the brownie batter.
- Serve the brownies with a side of whipped cream or a dollop of sugar-free whipped topping for an extra treat.
- Enjoy with pork rinds or cucumber slices for a crunchy contrast!
