Ingredients

  • 1/2 cup unsweetened cocoa powder

  • 1/2 cup granulated erythritol or your preferred keto sweetener
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon brewed coffee (cooled)
  • 1/4 cup sugar-free chocolate chips (optional)
  • Frosting:
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1/4 cup powdered erythritol
  • 1 tablespoon brewed coffee (cooled)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a mixing bowl, combine almond flour, cocoa powder, baking powder, salt, and erythritol. Mix well.
  3. In another bowl, whisk together the melted butter, eggs, vanilla extract, and cooled brewed coffee until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. If using, fold in the sugar-free chocolate chips.
  5. Pour the brownie batter into the prepared baking pan and spread it evenly.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  7. While the brownies are baking, prepare the frosting. In a mixing bowl, beat together the cocoa powder, cream cheese, softened butter, powdered erythritol, cooled brewed coffee, and vanilla extract until smooth and creamy.
  8. Once the brownies are done, allow them to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
  9. Once cooled, spread the frosting evenly over the brownies. Cut into squares and serve.

Notes

  • For a mocha flavor, add 1 teaspoon of instant coffee granules to the brownie batter.
  • Serve the brownies with a side of whipped cream or a dollop of sugar-free whipped topping for an extra treat.
