- 1 teaspoon vanilla extract
- 1/4 cup brewed coffee, cooled
- 1/4 cup sugar-free chocolate chips (optional)
- For the frosting:
- 1/4 cup unsweetened cocoa powder
- 1/4 cup unsweetened almond milk
- 1/4 cup powdered erythritol
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
- In a mixing bowl, combine almond flour, cocoa powder, baking powder, salt, and granulated erythritol.
- In another bowl, whisk together melted butter, eggs, vanilla extract, and brewed coffee until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. If using, fold in the sugar-free chocolate chips.
- Spread the brownie batter evenly into the prepared baking pan.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out mostly clean.
- Allow the brownies to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- While the brownies are cooling, prepare the frosting by whisking together cocoa powder, almond milk, powdered erythritol, and vanilla extract until smooth.
- Once the brownies are completely cool, spread the frosting evenly over the top.
- Cut into squares and serve.

- For a delightful crunch, serve with pork rinds or celery sticks.
- You can also add a sprinkle of chopped nuts on top of the frosting for added texture.
- For a mocha twist, consider adding a teaspoon of instant coffee granules to the brownie batter.
