  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup brewed coffee, cooled
  • 1/4 cup sugar-free chocolate chips (optional)
  • For the frosting:
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup unsweetened almond milk
  • 1/4 cup powdered erythritol
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a mixing bowl, combine almond flour, cocoa powder, baking powder, salt, and granulated erythritol.
  3. In another bowl, whisk together melted butter, eggs, vanilla extract, and brewed coffee until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. If using, fold in the sugar-free chocolate chips.
  5. Spread the brownie batter evenly into the prepared baking pan.
  6. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out mostly clean.
  7. Allow the brownies to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  8. While the brownies are cooling, prepare the frosting by whisking together cocoa powder, almond milk, powdered erythritol, and vanilla extract until smooth.
  9. Once the brownies are completely cool, spread the frosting evenly over the top.
  10. Cut into squares and serve.
