Description

This Frito Corn Salad is a delicious combination of sweet corn, tangy dressing, and crunchy Fritos. It’s a perfect side dish for summer barbecues and potlucks.


Ingredients

  • 4 cups corn kernels
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 1/2 red onion
  • 1 cup shredded cheddar cheese
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • Salt and pepper, to taste
  • 2 cups Fritos corn chips

Instructions

  • Cook and prepare the corn. Dice the vegetables.
  • In a large bowl, mix together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
  • Stir in corn, bell peppers, red onion, and cheddar cheese.
  • Add Fritos just before serving.

Notes

  • For extra flavor, add crumbled bacon or diced jalapeños.
  • Use Greek yogurt for a lighter dressing.
