- 4 cups corn kernels
- 1/2 red bell pepper
- 1/2 green bell pepper
- 1/2 red onion
- 1 cup shredded cheddar cheese
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- Salt and pepper, to taste
- 2 cups Fritos corn chips
Instructions
- Cook and prepare the corn. Dice the vegetables.
- In a large bowl, mix together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
- Stir in corn, bell peppers, red onion, and cheddar cheese.
- Add Fritos just before serving.
