- 2 medium summer squashes, sliced
- 1 cup all-purpose flour
- 1 cup cornmeal
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 cup buttermilk
- Vegetable oil for frying
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 tablespoons fresh dill, chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon lemon juice
Instructions
- Heat vegetable oil in a deep skillet over medium heat.
- In a bowl, mix flour, cornmeal, salt, pepper, and garlic powder.
- Dip each squash slice in buttermilk, then coat with the flour mixture.
- Fry the coated squash slices in hot oil until golden brown, about 3-4 minutes per side.
- Remove from oil and drain on paper towels.
- In a separate bowl, combine sour cream, mayonnaise, dill, parsley, and lemon juice to make the herb dip.
- Serve the fried squash warm with the herb dip on the side.

- For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend.
