  • 1 cup cornmeal

  • 1 cup buttermilk
  • Vegetable oil for frying
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Heat vegetable oil in a deep skillet over medium heat.
  2. In a bowl, mix flour, cornmeal, salt, pepper, and garlic powder.
  3. Dip each squash slice in buttermilk, then coat with the flour mixture.
  4. Fry the coated squash slices in hot oil until golden brown, about 3-4 minutes per side.
  5. Remove from oil and drain on paper towels.
  6. In a separate bowl, combine sour cream, mayonnaise, dill, parsley, and lemon juice to make the herb dip.
  7. Serve the fried squash warm with the herb dip on the side.
