Description
A refreshing and creamy chilled soup made with fresh peas and mint, perfect for warm days.
Ingredients

- 2 tablespoons extra virgin olive oil
- 1 medium onion, finely diced
- 2 cloves garlic, crushed
- 4 cups fresh or frozen green peas
- 4 cups vegetable stock
- 1 cup fresh mint leaves, tightly packed
- Salt and freshly ground black pepper to taste
- ½ cup sour cream (plus extra for garnish)
- Zest of one lemon for finishing
Instructions
- Heat the olive oil in a large saucepan over medium heat.
- Add the diced onion and sauté until soft and translucent, about 5 minutes.
- Incorporate the crushed garlic and sauté for another minute or two.
- Add the peas and vegetable stock, bringing the mixture to a vigorous boil.
- Lower the heat and let it simmer for approximately 10 minutes, or until the peas are tender.
- Remove from heat and mix in the fresh mint leaves.
- Allow the soup to cool for a few minutes before blending until silky smooth.
- Pour the pureed soup back into the pot and mix in the sour cream, adjusting seasoning with salt and pepper.
- Serve the soup chilled or warm, topped with extra sour cream and lemon zest.
Notes
- For a richer flavor, replace half of the vegetable stock with heavy cream.
- A dash of cayenne pepper can add heat.
- Croutons can provide a satisfying crunch as a garnish.
