Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, finely diced
  • 2 cloves garlic, crushed
  • 4 cups fresh or frozen green peas
  • 4 cups vegetable stock
  • 1 cup fresh mint leaves, tightly packed
  • Salt and freshly ground black pepper to taste
  • ½ cup sour cream (plus extra for garnish)
  • Zest of one lemon for finishing

Instructions

  1. Heat the olive oil in a large saucepan over medium heat.
  2. Add the diced onion and sauté until soft and translucent, about 5 minutes.
  3. Incorporate the crushed garlic and sauté for another minute or two.
  4. Add the peas and vegetable stock, bringing the mixture to a vigorous boil.
  5. Lower the heat and let it simmer for approximately 10 minutes, or until the peas are tender.
  6. Remove from heat and mix in the fresh mint leaves.
  7. Allow the soup to cool for a few minutes before blending until silky smooth.
  8. Pour the pureed soup back into the pot and mix in the sour cream, adjusting seasoning with salt and pepper.
  9. Serve the soup chilled or warm, topped with extra sour cream and lemon zest.

Notes

  • For a richer flavor, replace half of the vegetable stock with heavy cream.
  • A dash of cayenne pepper can add heat.
