- 2 pounds fresh cherries, pitted and halved
- 1 cup granulated sugar, divided
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon cornstarch
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
Instructions
- Preheat your oven to 375°F.
- In a large mixing bowl, combine the pitted cherries, 3/4 cup of sugar, lemon juice, vanilla extract, and cornstarch. Toss until the cherries are well coated.
- Pour the cherry mixture into a greased 9×13-inch baking dish.
- In another bowl, whisk together the flour, remaining sugar, baking powder, salt, cinnamon, and nutmeg.
- Add the melted butter and milk to the dry ingredients, stirring until just combined.
- Pour the batter over the cherry mixture in the baking dish, spreading it evenly.
- Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool for at least 10 minutes before serving.
Notes
- For a richer flavor, consider adding a splash of almond extract to the cherry mixture.
- You can substitute half of the cherries with blueberries or raspberries for a mixed berry cobbler.
- Serve warm with a scoop of vanilla ice cream for an extra treat.
