Description

A delicious and easy-to-make Fresh Cherry Cobbler, perfect for summer gatherings.

Ingredients

Scale
  • 2 pounds fresh cherries, pitted and halved
  • 1 cup granulated sugar, divided
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon cornstarch
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat your oven to 375°F.
  2. In a large mixing bowl, combine the pitted cherries, 3/4 cup of sugar, lemon juice, vanilla extract, and cornstarch. Toss until the cherries are well coated.
  3. Pour the cherry mixture into a greased 9×13-inch baking dish.
  4. In another bowl, whisk together the flour, remaining sugar, baking powder, salt, cinnamon, and nutmeg.
  5. Add the melted butter and milk to the dry ingredients, stirring until just combined.
  6. Pour the batter over the cherry mixture in the baking dish, spreading it evenly.
  7. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Allow to cool for at least 10 minutes before serving.

Notes

  • For a richer flavor, consider adding a splash of almond extract to the cherry mixture.
  • You can substitute half of the cherries with blueberries or raspberries for a mixed berry cobbler.
  • Serve warm with a scoop of vanilla ice cream for an extra treat.
