  • 4 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 4 cups beef broth
  • 1 cup dry white wine
  • 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • 8 slices of French bread, toasted
  • 2 cups shredded Gruyère cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot or Dutch oven, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are soft and caramelized, about 25-30 minutes.
  2. Sprinkle the sugar over the onions and continue to cook for an additional 5 minutes until they are deeply caramelized.
  3. Pour in the white wine and scrape the bottom of the pot to deglaze, cooking for about 5 minutes until the wine has reduced by half.
  4. Add the beef broth and thyme, then bring the mixture to a simmer. Season with salt and pepper to taste. Let it simmer for 20-25 minutes.
  5. Preheat your broiler. Ladle the soup into oven-safe bowls and place a slice of toasted French bread on top of each bowl. Sprinkle generously with Gruyère and Parmesan cheese.
  6. Place the bowls on a baking sheet and broil in the oven for 3-5 minutes, or until the cheese is bubbly and golden brown. Watch closely to prevent burning.
  7. Carefully remove the bowls from the oven and let them cool slightly before serving.

Notes

  • For a richer flavor, use homemade beef broth or add a splash of sherry or brandy to the soup before serving.
  • To make it vegetarian, substitute the beef broth with vegetable broth and use a mix of cheeses like mozzarella and cheddar for topping.
