Instructions

  1. In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions, salt, and pepper. Cook, stirring frequently, until the onions are caramelized and golden brown, about 20-25 minutes.
  2. Stir in the garlic powder and cook for an additional minute.
  3. Pour in the beef broth and bring the mixture to a simmer. Let it cook for about 10 minutes to allow the flavors to meld.
  4. Reduce the heat to low and stir in the heavy cream. If using, add the crumbled bacon at this point.
  5. Preheat your broiler. Ladle the soup into oven-safe bowls, and top each with a generous amount of shredded Gruyère cheese.
  6. Place the bowls under the broiler for 2-3 minutes, or until the cheese is bubbly and golden brown. Keep a close eye to prevent burning.
