- 2 cups heavy cream
- 1/4 cup powdered sugar
- 1 tablespoon dried lavender flowers
- 1 teaspoon vanilla extract
- 1 package (17.3 ounces) frozen puff pastry (2 sheets), thawed
- 1/2 cup honey
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1/4 cup water
- Fresh lavender sprigs for decoration (optional)
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- On a floured surface, roll out the thawed puff pastry sheets and slice each into three equal rectangles.
- Arrange the rectangles on the baking sheet and poke holes in them with a fork.
- Bake for 15-20 minutes until golden brown and crisp, then cool on a wire rack.
- In a saucepan, mix honey, granulated sugar, cornstarch, and water. Cook over medium heat until thickened, then cool.
- In a bowl, combine heavy cream, powdered sugar, dried lavender flowers, and vanilla extract. Whip until soft peaks form.
- Layer the dessert starting with a piece of puff pastry, then lavender cream, and honey mixture. Repeat with another layer and finish with a final pastry layer.
- Dust the top with powdered sugar and add fresh lavender sprigs if desired. Chill in the refrigerator for at least 30 minutes before serving.

- Ensure the puff pastry is fully thawed before rolling out.
- Chilling the dessert enhances the flavors.
- Fresh lavender sprigs are optional but add a nice touch.
